Instructions

Peel the apples and remove the cores.

Cut the apples into wedges.

Place the apple wedges in a bowl and toss with sugar and cinnamon.

Beat room temperature butter and sugar until light and airy.

Add the eggs one at a time and beat well between each egg.

Sift in flour and baking powder.

Gently fold the dry ingredients into the batter.

Line the base of a 24 cm round cake tin with parchment paper and grease the sides.

Add half of the batter to the tin.

Spread half of the apples over the batter.

Add the rest of the batter and top with the remaining apples.

Sprinkle with pearl sugar.

Bake the cake in the middle of the oven at 180 degrees for about 60 minutes, until cooked through.

Let the cake cool slightly before serving.
