Instructions
Boil the eggs for 14 minutes, until hard boiled.
Cool the eggs in cold water.
Peel the eggs and cut them in half lengthwise.
Remove the yolks and place them in a bowl.
Stir the yolks together with Dijon mustard, mayonnaise, melted butter and finely chopped shallot.
Season with salt and pepper.
Transfer the filling to a piping bag.
Fill the egg whites with the egg cream.
Top with finely chopped pickled red onion just before serving.
