Instructions
Boil the eggs for 11 to 12 minutes, until hard boiled.
Cool the eggs in cold water and peel them.
Cut the eggs in half lengthwise and remove the yolks.
Place the yolks in a bowl and mash them with a fork.
Fry the bacon until crisp and chop it into small pieces.
Finely chop the shallot.
Mix the yolks with Dijon mustard, mayonnaise, finely chopped shallot, half of the bacon, salt and pepper.
Transfer the filling to a piping bag or use a small spoon.
Fill the egg whites with the mixture.
Top with the remaining bacon before serving.

Tips & tricks
The filling can be made a little ahead, but wait to add the bacon until just before serving. This keeps the topping crisp and gives better contrast to the egg cream.
