Instructions
Cut the cucumber into thin slices or strips with a cheese slicer, mandoline or vegetable peeler.
Stir together water, sugar, vinegar, salt and freshly ground pepper until the sugar dissolves.
Pour the brine over the cucumber.
Let the cucumber salad sit for at least 15 minutes before serving.
Toss lightly just before placing it on the table.
