Instructions
Heat the oven to 180 degrees.
Cut the sourdough baguette into thin slices.
Spread the slices on a baking tray lined with parchment paper.
Drizzle with 4 tbsp olive oil.
Bake for 8 to 10 minutes, until crisp and golden.
Cut the tomatoes into small pieces.
Finely chop shallot and basil.
Finely grate the lemon zest and squeeze out the juice.
Mix tomato, shallot, basil, lemon zest, lemon juice, 2 tbsp olive oil and balsamic vinegar.
Season the tomato salad with salt and pepper.
Gently tear the burrata into smaller pieces.
Top the crisp crostini with burrata and tomato salad just before serving.
