Instructions
Cut the tomatoes into pieces.
Cut the shallot into rough pieces.
Place tomato and shallot on a baking tray lined with parchment paper.
Drizzle with olive oil.
Bake at 200 degrees for 20 to 25 minutes, until the tomatoes are soft and lightly caramelized.
Add the roasted tomatoes and onion to a blender with tomato paste, sugar and cream.
Blend into a smooth soup.
Pour the soup into a saucepan.
Bring to a boil and season with salt and pepper.
Spread butter on the bread slices.
Add grated cheese to half of the slices.
Place the remaining bread slices on top.
Fry the grilled cheese sandwiches in a pan over medium heat until the cheese is melted and the bread is golden.
Serve the tomato soup with warm grilled cheese.
