Heat the oven to 200 degrees.
Cut the tomatoes into rough pieces.
Cut the shallot into rough pieces.
Place tomatoes and shallot on a baking tray.
Drizzle with olive oil.
Bake in the oven for 20 to 25 minutes, until the tomatoes are soft and lightly caramelized.
Add tomatoes and shallot to a blender with tomato paste, sugar and cream.
Blend into a smooth soup.
Pour the soup into a saucepan and bring quickly to a boil.
Season with salt and pepper before serving.
