Heat the oven to 200 degrees.
Peel the potatoes and cut them into thin slices.
Melt butter in a saucepan over medium heat.
Add cream, crème fraîche, finely chopped garlic and thyme. Stir well.
Season the cream mixture with salt and pepper.
Place the potato slices in an ovenproof dish.
Pour the cream mixture over the potatoes and top with grated cheese.
Bake in the middle of the oven for about 30 minutes, until the potatoes are tender and the cheese is golden.
Let the dish rest for a few minutes before serving.
