Boil the potatoes until tender but still firm enough to hold their shape.
Drain the water and let the potatoes cool.
Cut the potatoes into even pieces.
Finely chop the pickles and cut the spring onions into thin rings.
Mix sour cream, mayonnaise, pickles, pickle brine and spring onion in a bowl.
Season the dressing with salt and pepper.
Gently fold the potatoes into the dressing.
Keep the potato salad cold until serving.
