Creamed Mushrooms with Cream

Instructions

Clean the mushrooms and cut large pieces smaller.

Place the mushrooms in a dry frying pan.

Cook over medium high heat until the liquid has evaporated.

Add butter, finely chopped shallots and finely chopped garlic.

Cook until the mushrooms are golden and the onion is soft.

Add cream and bring to a boil.

Lower the heat and let the creamed mushrooms simmer until lightly thickened.

Season with lemon juice, salt and pepper.

Top with finely chopped chives before serving.

Tips & tricks

Do not add the cream until the mushrooms have browned and their liquid is gone. This gives the stew more flavor and a less watery texture.
