Clean the mushrooms and tear or cut them into large pieces.
Finely chop the shallots and garlic.
Place the mushrooms in a dry pot or frying pan and heat until the liquid has evaporated.
Add butter, shallots and garlic. Continue cooking until the mushrooms are golden and the shallots are soft.
Pour in the white wine and let it reduce by about half.
Add vegetable stock and water. Bring to a boil and let the soup simmer for about 30 minutes.
Season with salt and pepper before serving.
