Instructions
Clean the chanterelles and brush away soil and debris. Rinse them quickly only if needed.
Tear large chanterelles into smaller pieces.
Place the chanterelles in a dry frying pan and cook until the liquid has evaporated.
Add butter, finely chopped shallots and finely chopped garlic.
Cook until the mushrooms are golden and the onion is soft.
Pour in white wine and let it reduce almost completely.
Add chicken stock and water.
Let the soup simmer for about 30 minutes.
Season with salt and pepper before serving.
