Tips & tricks
Let the cookies rest on the tray for a few minutes after baking. They often seem soft at first, but firm up as they cool and become easier to move to a wire rack without breaking.
Did you know?
Cookies get chewy centers and crisp edges when the balance between butter, sugar and flour is right. Brown sugar adds more caramel flavor and moisture, while dark chocolate gives clearer taste. When the center still seems a little soft when removed, the cookies set perfectly as they cool.
