Instructions
Finely chop the shallot.
Cut the cauliflower into florets.
Melt butter in a saucepan and cook the shallot until soft and glossy.
Add cauliflower, water, whole milk and vegetable stock cubes to the saucepan.
Bring to a boil and let the soup simmer for about 15 minutes, until the cauliflower is completely tender.
Blend the soup smooth with an immersion blender.
Season with salt and pepper.
Cut the bacon into cubes.
Fry the bacon in a dry pan until crisp.
Top the soup with crispy bacon just before serving.
