Instructions
Boil the potatoes in water until tender.
Drain the water and let the potatoes steam dry.
Melt sugar in a frying pan over medium heat until it becomes golden caramel.
Carefully add water and cook until the caramel has dissolved.
Add the potatoes to the pan.
Let the potatoes simmer in the caramel until most of the liquid has evaporated and the potatoes are glossy.
Add butter and gently toss the potatoes until glazed.
Season with salt and pepper before serving.
