Instructions
Add almonds, sugar, water and vanilla sugar to a thick bottomed saucepan.
Place the saucepan over medium heat and bring to a boil.
Stir constantly while the sugar crystallizes and forms a white layer around the almonds.
Continue stirring until the sugar melts again and the almonds become glossy and caramelized.
Add butter and stir well until evenly distributed.
Spread the almonds onto parchment paper.
Let them cool completely before enjoying or storing in an airtight tin.

Stir constantly near the end. The caramel goes quickly from perfect to burned, especially once the sugar has melted again.
