Instructions

Start with the croutons.

Cut the rye bread into small cubes and spread them on a baking tray lined with parchment paper.

Drizzle with olive oil and season with flaky salt and freshly ground pepper.

Bake at 180 degrees for 15 to 20 minutes, until the croutons are crisp.

Grate garlic into a bowl.

Add Dijon mustard, Worcestershire sauce and egg yolks.

Whisk well together.

Gradually add sunflower oil in a thin stream while whisking, until the dressing thickens.

Stir in grated Parmesan.

Season with lemon juice, salt and pepper.

Fry the bacon until crisp in a frying pan.

Place the bacon on paper towels and let it drain.

Season the chicken with salt and pepper.

Fry the chicken in the bacon fat over high heat for 2 to 4 minutes on each side.

Lower the heat, add butter and cook until the chicken reaches a core temperature of 68 degrees.

Let the chicken rest before slicing.

Tear the romaine lettuce into rough pieces.

Toss the lettuce with dressing, chicken, bacon, Parmesan, sunflower seeds and rye croutons.

Serve right away.
