Instructions
Set the oven to 175 degrees fan.
Line a small square pan of about 20 x 20 cm with parchment paper.
Melt butter in a saucepan over low heat.
Add chopped dark chocolate and stir until everything is melted and smooth.
Remove the saucepan from the heat.
Whisk eggs and sugar together until pale and airy.
Carefully pour the chocolate mixture into the egg mixture while stirring.
Sift in flour, baking powder, cocoa powder, salt and vanilla sugar.
Fold the dry ingredients in gently until the batter is even.
Pour the batter into the pan and smooth the surface.
Bake in the middle of the oven for 20 to 25 minutes, until the edges are set and the center is still slightly soft.
Cool the brownie in the pan before cutting into pieces.

Cool the brownie completely in the pan before cutting. This gives neater pieces and a more stable, chewy texture.
