Lightly fry the country bread in a pan with olive oil until crisp and golden.
Cut the brie into slices and place it on the bread.
Return the bread slices to the pan, reduce to low heat and cover with a lid.
Let the cheese melt gently.
Cut the tomatoes into pieces.
Finely chop shallot and basil.
Mix tomato, shallot, basil, lemon juice, olive oil and balsamic vinegar.
Season the tomato salad with salt and pepper.
Top the brie toasts with tomato salad and finely chopped parsley before serving.
