Instructions
Heat the whole milk to about 37 degrees.
Stir in dry yeast.
Add buckwheat flour, flour and salt.
Stir into a smooth batter.
Cover the bowl with plastic wrap and let the batter rise for 45 minutes.
Separate the eggs.
Whip the egg whites until stiff.
Melt the butter and let it cool slightly.
Stir egg yolks and melted butter into the batter.
Gently fold in the whipped egg whites.
Heat a frying pan over medium heat and add a little butter.
Cook small blinis until golden on both sides.
Serve warm or lukewarm.
