Peel potato, celery root, parsley root and beets.
Cut all the vegetables into even pieces.
Add the vegetables to a bowl.
Toss with sunflower oil.
Sprinkle over the air fryer seasoning mix and toss well.
Place the vegetables in the air fryer basket in an even layer.
Cook at 180 degrees for 15 to 18 minutes.
Shake the basket or turn the vegetables halfway through cooking.
Serve the vegetables warm.
