Instructions

Rub the baking potatoes with olive oil and flaky salt.

Wrap the potatoes in aluminum foil.

Bake at 200 degrees for 60 to 90 minutes, depending on the size of the potatoes.

Add feta cheese, sour cream, lemon juice, finely chopped chives and garlic to a bowl.

Whip or blend into an airy cream.

Season with salt and pepper.

Cut the baked potatoes lengthwise and press them lightly open.

Top the potatoes with feta cream and serve warm.
