Heat the oven to 200 degrees. Rub the baking potatoes with olive oil and flaked salt, and wrap them in aluminum foil.
Bake the potatoes in the oven for 60 to 90 minutes, depending on size, until completely tender. You can also cook them in an air fryer at 200 degrees for about 60 minutes.
Melt the butter in a saucepan over medium heat. Stir in the flour and add the milk while whisking, until the sauce thickens.
Remove the pan from the heat and stir in the grated cheddar until the sauce is smooth and creamy.
Cut the potatoes lengthwise and press them lightly open. Top with cheddar sauce and pickled red onion before serving.
