Baked Grapes and Brussels Sprouts

Instructions

Cut the Brussels sprouts in half.

Cut the red onion into thin wedges or slices.

Add Brussels sprouts, red onion and grapes to the air fryer.

Add olive oil, finely chopped thyme, salt and pepper.

Toss everything well.

Cook at 180 degrees for about 12 minutes, until the Brussels sprouts are tender and lightly golden.

Drizzle with balsamic vinegar.

Top with coarsely chopped walnuts and toss lightly before serving.

Tips & tricks

Add the walnuts near the end or just before serving. This keeps them crisper and gives better contrast to the soft grapes and Brussels sprouts.
