Asparagus Salad with Pistachios and Feta

Instructions

Cut about 2 cm off the bottom of the asparagus.

Peel the lower part if the stalks are thick.

Toss the asparagus with a little of the olive oil, salt and pepper.

Grill the asparagus over high heat for about 2 minutes on each side, until lightly grilled but still crisp.

Cut the asparagus into large pieces.

Finely chop the shallot, dill and parsley.

Stir together the remaining olive oil, shallot, lemon juice, dill and parsley into a simple vinaigrette.

Season with salt and pepper.

Toss the asparagus with feta and vinaigrette.

Top the salad with roughly chopped pistachios just before serving.
