Instructions

Peel the almond potatoes and boil them in unsalted water until tender.

Drain the water and let the potatoes steam dry for a minute.

Add butter and cream.

Stir the potatoes with a balloon whisk or spoon into an even mash.

Press the mashed potatoes through a fine sieve for an extra smooth purée.

Season with salt and pepper at the very end.

Tips & tricks

Avoid using an immersion blender for potato purée. It can make the potatoes gluey, while a sieve or potato ricer gives a lighter and smoother result.
