Instructions
Finely chop the white chocolate.
Melt the chocolate gently over a water bath.
Remove the bowl from the heat and stir in the egg yolks.
Let the chocolate mixture cool slightly.
Whip the cream to soft peaks.
Fold the chocolate mixture into the cream little by little.
Cut strawberries into pieces.
Mix strawberries with sugar and lemon juice.
Finely grate the lemon zest.
Add sweet biscuits, butter and lemon zest to a food processor.
Blend into a coarse crumble.
Layer mousse, strawberries and crumble in glasses or bowls before serving.
