Peel half of the apples and leave the peel on the rest. Remove the cores and cut the apples into small, even pieces.
Place the apple pieces in a saucepan with sugar, cinnamon stick and water. Bring to a boil over medium heat and simmer for 10 to 15 minutes, until tender and beginning to break down.
Remove the cinnamon stick and stir the apples lightly into a coarse compote. Let the compote cool until lukewarm or cold.
Melt the butter in a large frying pan over medium heat. Add crushed rusks, ground cinnamon and sugar.
Cook the rusk mixture for about 5 minutes, stirring often, until golden, crisp and lightly caramelized. Cool completely.
Whip the cream with sugar and the seeds from the vanilla bean until soft and airy.
Layer apple compote, crisp rusks and whipped cream in a bowl. Finish with a little rusk mixture on top before serving.

Tips & tricks
Assemble the dessert just before serving if you want the rusks to stay as crisp as possible. The compote can easily be made the day before, so the dessert only needs layering.
