Instructions
Peel half of the apples and leave the skin on the rest.
Remove the cores and cut the apples into small, even pieces.
Add the apple pieces to a saucepan with sugar, cinnamon stick and water.
Bring to a boil over medium heat and let the apples simmer for 10 to 15 minutes, until tender and starting to break down slightly.
Remove the cinnamon stick and stir the apples lightly into a coarse compote. Let it cool.
Melt butter in a large frying pan over medium heat.
Add crushed rusks, ground cinnamon and sugar.
Cook the mixture for about 5 minutes, stirring often, until golden, crisp and lightly caramelized. Cool completely.
Whip cream, sugar and the seeds from the vanilla pod into a soft and airy cream.
Layer apple compote, crisp rusks and cream in serving glasses or a large bowl.
Finish with a sprinkle of crisp rusks on top and serve cold.
