Peel the roughest rhubarb stalks if needed.
Cut the rhubarb into 1 to 2 cm pieces.
Add water, sugar and cinnamon stick to a saucepan and bring to a boil.
Add the rhubarb.
Let the porridge simmer for 10 to 15 minutes, until the rhubarb is tender and has started to break down.
Stir potato starch into a little cold water.
Remove the saucepan from the heat.
Stir the slurry into the porridge in a thin stream while stirring.
Return the saucepan to low heat and let the porridge just come to a boil.
Pour the rhubarb porridge into a serving bowl and cool.
