Panna Cotta with Blackberries and Pecans

Instructions

Soak the gelatin sheets in cold water for 5 to 10 minutes, until soft.

Add cream and sugar to a saucepan.

Split the vanilla bean lengthwise and scrape out the seeds.

Add vanilla seeds and vanilla bean to the saucepan.

Gently heat the mixture to the boiling point while stirring, but do not let it boil.

Remove the saucepan from the heat and remove the vanilla bean.

Squeeze the water from the gelatin sheets.

Stir the gelatin into the warm cream mixture until completely dissolved.

Pour the mixture into serving glasses or molds.

Refrigerate the panna cotta for at least 4 hours, until set.

Top with blackberries and chopped pecans just before serving.
