Instructions
Rinse the apples and remove the cores.
Cut the apples into pieces and place them in a saucepan.
Add water and cinnamon stick.
Cook for 20 to 30 minutes, until the apples are tender.
Add sugar and stir well.
Blend the apple compote with an immersion blender if you want a smoother texture.
Cool the apple compote completely.
Melt butter in a frying pan.
Add crushed rusks, sugar and ground cinnamon.
Cook the mixture golden and crisp for about 5 minutes.
Cool the rusk mixture.
Split the vanilla bean lengthwise and scrape out the seeds.
Whip cream, sugar and vanilla seeds into airy whipped cream.
Layer apple compote, cream and crisp rusks in glasses.
Serve right away, or chill the dessert until serving.
