Instructions
Rinse the rice well in a sieve with cold water.
Soak the rice in cold water for at least 3 hours, preferably overnight.
Add a little water to a saucepan and place the sieve with rice over the saucepan so the rice does not touch the water.
Cover with a kitchen towel and lid, and steam the rice for about 20 minutes.
Transfer the steamed rice to a bowl.
Bring coconut milk, sugar and salt to a boil in a saucepan.
Let the mixture simmer for a couple of minutes.
Pour half of the coconut milk over the rice and stir together.
Mix cornstarch with a little cold water.
Add the slurry to the saucepan with the remaining coconut milk and bring to a boil until the sauce thickens.
Peel the mango and cut it into slices.
Serve the rice with mango, coconut sauce and toasted sesame seeds.

Tips & tricks
