Instructions

Soak the gelatin sheets in cold water until soft.

Cut the lemons in half.

Carefully scrape out the contents if you want to serve the dessert in lemon shells.

Squeeze the lemon juice into a small saucepan.

Gently heat the lemon juice.

Squeeze the water from the gelatin sheets.

Stir gelatin, sugar, cream and vanilla extract into the warm lemon juice.

Heat while stirring until sugar and gelatin are dissolved, but avoid boiling hard.

Cool the mixture slightly.

Pour it into lemon shells or small serving glasses.

Refrigerate for at least 3 hours, until set.
