Rinse the plums, halve them and remove the stones.
Place the plums in a saucepan with water and cinnamon stick.
Cook for 20 to 30 minutes, until the plums are tender.
Add sugar and stir well.
Blend the plum compote smooth with an immersion blender if you want a smoother texture.
Cool the plum compote completely.
Melt butter in a frying pan.
Add crushed rusks, sugar and ground cinnamon.
Cook the mixture golden and crisp for about 5 minutes.
Cool the rusk mixture.
Split the vanilla bean lengthwise and scrape out the seeds.
Whip cream, sugar and vanilla seeds into airy whipped cream.
Layer plum compote, cream and crisp rusks in glasses.
Serve right away, or chill the dessert until serving.
