Blend the cloudberries with a hand blender into a smooth purée.
Strain the cloudberry purée to remove the seeds.
Whisk eggs and sugar until pale and airy.
Whip the cream to soft peaks.
Soak the gelatin sheets in cold water for about 5 minutes, until soft.
Gently heat a little of the cloudberry purée in a saucepan. Squeeze the water from the gelatin sheets and stir them into the warm purée until fully dissolved.
Fold the rest of the cloudberry purée into the egg mixture.
Gently fold in whipped cream and the gelatin mixture, so the mousse keeps its air.
Pour the mixture into a mold or serving glasses. Refrigerate for at least 4 hours, preferably overnight, until set.
